Ingredients


Brinjal - 200 gm
Coconut - half one
Onion - 15 gm
Garlic - 2 flakes
Ginger - a small piece
Green chillies - 3
  Red chillies - 5
Turmeric - 2 gm
Pepper - 2 gm
Salt - to taste
Oil - 30 ml
Mustard seeds - half tsp
Vinegar - 15 ml
Preparation Method
Wash and cut brinjals,dip them in water
for 10 minutes.
Grind red
chillies,turmeric,pepper,salt,garlic and
50 gm of onion into a fine paste.
Heat oil and fry brinjals till light
brown,remove.
To the oil ,add mustard seeds,sliced
ginger,onion and green chillies.Fry well.
Add grinded mixture.
Add second and third extract of coconut.
Bring to boil.Add vinegar and brinjals
and continue to boil till liquid become
thick.
Add first extract of coconut milk and
remove from fire.
Serve hot.
